Green coffee must meet certain quality parameters to be sold. This makes it easier for producers to market their grain and allows customers to meet the demand from their roasters.
The first point is to define what green coffee is. After processing, the seed is protected by a yellow shell called endocarp or parchment. By removing the parchment through the threshing process and selecting the beans, green coffee is obtained, which is defined as one that has not yet been roasted.
Green coffee for sale has the following characteristics:
1.Uniform color. The color is indicative of the altitude at which the grain was grown and the good practices in its processing.
2.The humidity should be between 10 and 12 percent. The percentage of humidity influences the flavor development of the cup and also depends on a good toasting.
3. It must not contain grains affected by fungus.
4. No live or dead insects or strange pests,
5. Freshness. Coffee with a musty, earthy, vinegar or petroleum odor is not accepted.
